Beef, potatoes and love.

Steak and Potato Casserole:

  • 2-8 oz.steaks (or ground beef if you prefer)
  • 4-large potatoes
  • 1-onion
  • Garlic / Salt / Butter / Rosemary / Oil
  • Marinade – Beer (your choice), Italian Dressing

Directions :

  1. Pre-heat your oven to 350 degrees. Take a couple of steaks (preferably skirt steaks which have been marinating for an hour in beer, Italian dressing and lemon and/or lime juice) out of the fridge. Rub down your steaks generously with salt and pepper.
  2. Wash four medium sized potatoes and stab a few times with a fork so they don’t explode when cooked, turning your microwave into a class-6 biohazard. Bake potatoes in the microwave for 4 minutes on each side, then cut them up (with the skin on if you like) and in a big bowl mash with some salt, pepper, milk, rosemary and butter to your preferred consistency.
  3. While the potatoes are in the microwave, put a pan on the stove top over medium to high heat and add enough olive oil and/or butter to lightly coat. Chop up one onion and a mince a few cloves of garlic (the more you love it the more you’ll want). Add them to your pan to cook down with a tiny splash of beer (the beer you’ve of course been drinking while doing this…did I forget that step?). Keep things cooking evenly by flipping them around every minute or so.
  4. Lay down the steaks you took out before on the hot pan. Cook on each side until seared on the outside and pink in the middle (the steak will be cooked more in the oven later so make sure you’re only cooking to rare or medium-rare depending on your preference).
  5. When steak and potatoes are done, turn off heat, layer some of the mashed potato mixture in an oil or butter-greased oven safe Pyrex dish and then add another layer of the steak and onions (strain or pour out all of the liquid first so that the juices don’t get everything soggy), then add another layer of potatoes another layer of steak and onions and finally, a layer of seasoned breadcrumbs on top. Cook at around 350 degrees until it’s somewhat crisp on the surface to your liking. Top with dollops of sour cream, BBQ sauce or whatever other condiments you like. Spoon out and serve.
  6. And if you’re cooking for a lady-friend, add some sprigs of parsley or chopped scallion to the top so it looks like you really, really know what you’re doing.
